Date Balls

I was headed out the door and realized I had NO snacks for myself or Colt. With ten minutes til I had to leave, I whipped up this fantastically delicious and nutritious carry along.

These are a mainstay in our home for several reasons:

  1. I hide all sorts of good, healthy stuff in there so I don’t care how many he eats… or if it is ALL he eats.

  2. They are a great balance of fats, proteins, and carbs to avoid blood sugar crashes.

  3. They taste like chocolate… how can you go wrong there???

Delicious Date Balls

Ingredients:

1/2 cup Walnuts

12-15 Medjool Dates

2 T Raw Cacao Powder or just unsweetened Cocoa Powder

1 T Great Lakes Collagen Powder

1 T Coconut Oil or 2 T MCT Oil**

Dash each of cinnamon, sea salt and vanilla extract

1 T water

Unsweetened Coconut Flakes

Optional: a dash of vanilla extract, cinnamon, 

 

In a food processor, I chopped up like 10-12 Medjool Dates. Add 2 T almond meal and turn it on again. Add 1 T coconut oil, a splash of vanilla, 2 T Raw cacao powder, a dash of himalayan salt and a dash of cinnamon and turn it on again til combined. Add 1 T water and turn on to bring it all together in a ball. You can add a splash more if needed. Pull out spoonfuls and roll in unsweetened coconut flakes.

Soooooo Yum!! 7 minutes total… although I didn’t make all the balls. I made like 5 and put the remainder in a container to finish later.

**MCT OIL: I like this one! Medium-Chain Triglycerides (MCT) are digested easily and sent directly to your liver, where they have a thermogenic effect and the ability to positively alter your metabolism. This is one reason why many people claim that MCTs, including coconut oil, are burned by the body for energy, or “fuel,” instead of being stored as fat.
