Choooooooooocolate. I love chocolate. My kids love chocolate. I need my kids to eat breakfast and I can’t always be elaborate about it….. or patient for that matter. I LOVE A GOOD STRAWBERRY!!!
Strawberries are in season here in Central Florida and I am in heaven. I love taking the boys to pick them fresh, eating them right out of the field. I love seeing them with red juice dripping down their chins and strawberry mud on their fingers. And I REALLY love turning the strawberries into delicious, healthy eats! You will love these Strawberry Shortcakes. The shortcake portion can easily be amended into Blueberry Muffins or cinnamon muffins, too. The recipe makes 3 jumbo muffins or 6 regular muffins. I suggest doubling it! ;-) As an extra bonus, this can be made without a mixer and is easy enough for my four yr old to essentially do alone with just supervision.Read More
Every so often, you just have to have Mac and Cheese. If that Mac and Cheese could also be pretty darn good for you AND super Yummy, well, how do you say no? Thi recipe started as a Pasta Carbonara recipe. One day, I had the revelation that it could easily be converted to it’s cheesier cousin. And so it began…Read More

See How to make it happen during the week HERE!Read More

This recipe can be done in the Crock pot or you could do it in a cast iron skillet with a lid (place it in the oven for 4 hours at 280*). The herbs and the heavy cream lend flavor and moisture to meats that might otherwise be dry, like pork chops or chicken breasts.Read More
This is not a traditional Ropas Viejas. Hell, I can’t even pronounce that right. So, who am I to claim I’m making it right? I can verify that it is delicious and that it can be made in an InstantPot, a Crock Pot, or (my favorite) a Dutch Oven and I’ll explain how to do it for each.Read More
Bone Broth is a big part of my cooking regimen. Over the years, I have made it many different ways- Crock Pot, Instapot, on the stove. All of these are good ways to do it…. the key is to just do it. The method of cooking changes little more than the cooking time. I drink bone broth on many days and use it as a means of mitigating longer fasting periods.Read More
This recipe came from a deep need to do SOMETHING DIFFERENT with the leftover turkey from Thanksgiving. Good Lord, did we really need a turkey that big? It seemed like a good idea at the time….. I started with this beautiful recipe from GimmeSomeOven. I changed it based on what I had on hand and it was amazing! It makes a huge amount the way I did it. So you might plan to make this and freeze some or use it for an easy dinner party.Read More

This is a new FAVORITE!! I made this last week when I was invited to a Middle Eastern Feast. I had no idea what to bring, like not a clue. So I reviewed a few recipes and this is the resulting recipe. It is so delicious and the warm flavors would pair so good with a winter squash soup or the Stuffed Acorn Squash.Read More
