Double Chocolate Chip Muffins- Grain Free and Kid Approved
Choooooooooocolate. I love chocolate. My kids love chocolate. I need my kids to eat breakfast and I can’t always be elaborate about it….. or patient for that matter. It takes every ounce of everything I have sometimes not to scream at my oldest to Eat-Your-Food-Dammit-So-I-Can-Be-Done-Feeding-People!!!!!! These muffins allow me to just grab and go or to leave something I know he will eat when a sitter is helping out. Store them in a container in the refrigerator and enjoy them at room temperature or heated in the oven. Hopefully, they will work for you, too!
Double Chocolate Chip Muffins
Ingredients: This makes 6-7 regular muffins or 3 jumbo.
1/3 C Coconut Oil
2-3 Tbsp Honey
1/2 tsp vanilla extract
1/4 tsp almond extract
1/3 C Coconut Flour
1/2 tsp baking powder
1/3 C Cacao Powder
Combine the wet stuff- Eggs through Almond Extract and whisk well. Place the rest of the ingredients, except Chocolate Chips, in a separate bowl and stir to combine. Pour the wet ingredients into the dry ingredients and whisk together. Allow to stand a minute or two. Stir in the Enjoy Life chocolate chips. Pour into a silicone muffin pan and bake them for 15-20 min at 350*
