Yucca Fries with Sriracha Dipping Sauce
Yucca Fries…. it’s where it’s at!! If you want to wow your family and friends, replace your usual potato standby with these. The yucca is just so so so yummy and crisp. You can use this sriracha sauce for a quick dip or take a little more time to make some Awesome Sauce.
Ingredients:
2 Large Yucca *** use frozen yucca for a faster and just as yummy alternative
Coconut Oil
Sea Salt
Sauce:
½ cup Whole Milk Ricotta Milk
1-2 t Sriracha sauce
salt
Directions:
Peel the yucca and cut into fries, removing the woody vein in the center. Place in a pot and cover with water. Bring to a rolling boil and allow to cook for 5 minutes. Using a slotted spoon, remove the yucca to a large plate or baking sheet and allow to dry. Meanwhile in a bowl, combine Ricotta cheese and 1 tsp of sriracha. Add a dash of salt. Add the other tsp of sriracha if you prefer a spicier sauce.
Heat coconut oil in a pan. Drop yucca in the hot oil in batches. Allow to cook until golden brown. Then remove with the slotted spoon. Sprinkle with salt immediately.
*** Frozen yucca is in the international section of the freezer aisle. It’s already peeled and chunked. You still need to boil it, though, and remove the woody center.
