Paleo Pumpkin Brownies

These are delicious and the texture is amazing. My whole family loves them! We call these a “free food” which means that the kids can eat them whenever they want- breakfast, lunch, dinner, snack. I take these to gatherings to be sure I have a yummy sweet something I can chow on without any guilt…. and I never have any to bring back home. Here, you see my son on his FOURTH one. And yes, he has imprisoned himself in a dining room chair as he devours Paleo Pumpkin Brownies. I don’t know. I have no explanation…. haha!

Paleo Pumpkin Brownies

Ingredients:

1.5 C Almond Butter

1 C Pureed Pumpkin

2 ripe bananas

1/4-1/2 c honey ot maple syrup.. I use the lesser amount but you might like it sweeter

2 tsp Baking Soda

2 tsp. Pumpkin Pie Spice

2 tsp. Cinnamon

3/4 tsp Vanilla extract

1/2 tsp. Almond Extract

2 Tbsp Coconut Flour

2/3 C mini Chocolate Chips

1/2 tsp Himalayan salt

Ok, this doesn’t get any easier. Put it all in a bowl and mix it. Grease a 9 x 13 pan (glass or metal) and dump it all in. Smooth it out and throw it in the oven. 30 minutes at 350* should do it. Just insert a knife and see if it comes out clean. Let these guys sit and cool before you cut them into squares. I store mine in the refrigerator.
